Acai Blueberry Cheesecake

I am a cake person, a chocolate person, a cheesecake person, a brownie person, an energy bar person, a hot chocolate person, a nut butter person, a dessert person in general. The biggest sweet tooth in my family for sure!

Over the past year or so I have started to incorporate more savoury dishes into my life but this still needs some tweaking. Since I turned towards health and whole foods, eliminating mostly dairy, animals, sugar and gluten, I have been loving the veganised desserts even more. It might sound hard to make something without eggs, white flour and sugar that will stay together and taste good, but in my experience the whole world starts to turn even smoother and with less side effects both for my own body and the environment. 

Moreover, as you can make vegan cakes with raw ingredients, totally eliminating the baking process, I find the dessert making more easy and fun. Also, you keep the health and nutrition properties of the individual ingredients high and stay away form the store-bought additive filled fake foods.

A Caker Rather Than A Baker

Tell me who doesn´t like an oven-warm croissant or a freshly baked cheese roll. Still I find it funny to jump into the bakery world to master the white bread techniques when my main focus is to feed my body and soul well. Every now and then I truly enjoy eating a pastry bread or a traditional sponge cake but having it on my table every day would be another question. I would definitely love that but in return I would start to grow as a yeast myself 🤣

That is why I went towards the vegan desserts. Though, I have to say, most of the time a vegan cake slice is much denser and richer in calories than a regular white flour-white sugar cake with cream cheese filling, a vegan version is better to digest for your body, full of health benefits and also kills the sweet tooth cravings for sure. Shortly, as most of the vegan desserts are made without baking I consider myself a caker rather than a baker.

Presenting you my old creation in a new form. It is a Raw Vegan Acai Blueberry Cheesecake with a Coconut touch. 

I love the smooth cheesecake filling and this time I decided to keep the taste in two variations – one clean pure date and vanilla sweetened layer topped with blueberry and acai purple power.
Acai bowls got so popular recently, but I felt like doing something a little different, ending up incorporating this powder into my desserts.

The crust is made of almonds and roasted coconut flakes, which bring a little tropical feeling into this cake. Also, added some coconut cream into the filling to support that flavour. 

For the decoration I used dark chocolate both in pieces and in a melted form, dried mulberries and some fresh blackberries to have a fancier look, but be as free and wild as you wish. The cake is already tasty without anything extra.

 

To bring out some health benefits of both berries I introduce you to TCM(Traditional Chinese Medicine).

Acai berries are known for boosting Qi energy (life force), immune strength and vitality. They tonify blood and support the Liver and Kidneys.

Blueberries are considered sweet, sour and cool in temperature. Their ability is to clear heat, expel dampness, and eliminate toxins. From organ point of view they support Lungs, Stomach and Spleen.

 

Both berries are rich in antioxidants, promoting detoxification and boosting the metabolism.

Equipment

  • food processor

Ingredients

Crust

  • 1/2 cup almonds 80g
  • 1/4 cup roasted coconut flakes 15g
  • 1 tbsp agave 15g
  • 1 tbsp coconut oil 15g, melted

Filling

  • 1 cup cashews 150g, soaked overnight
  • 1/3 cup coconut cream 75g
  • 1/2 cup dates 75g, soaked
  • 1/2 tsp vanilla extract
  • pinch salt
  • 1/3 cup frozen blueberries 45g
  • 1 tbsp acai powder @bemoresuperfoods

Decoration

  • dark chocolate both melted and cut in small pieces
  • dried mulberries
  • fresh blackberries
  • acai berry powder
  • powdered sugar

Instructions

  • the night before place cashews and dates into two different bowl, cover with water and let them soak overnight in the fridge

Crust

  • in a food processor blend almonds and coconut flakes until small pieces
  • add agave and melted coconut, pulse to incorporate (if not sticking together add some more)
  • divide the crust into molds and press firmly
  • place into freezer while making the filling

Filling

  • drain and rinse the cashews
  • drain the dates
  • place all the filling ingredients besides acai and blueberries into a high speed blender or food processor and blend until very smooth
  • pour 2/3 of the batter into the cake molds leaving 1/3 in the blender
  • add frozen blueberries and acai berry powder into the leftover batter into the blender and blend until smooth
  • pour the purple layer on top of the white one
  • place the cakes into freezer overnight or at least for 3 hours
  • 1 hour prior to serving take the cakes out to thaw and decorate how you like
  • keep in the fridge or store in the freezer

Notes

  • makes 8 little cupcake size cheesecakes
  • I used a Blendtec Professional 800 Blender. For the crust Blendtec Wildside and for the filling Blendtec Twister jar - my absolute favourite and lifesaver as you can scrape down the sides during the blending getting a smoother filling and saving the time.
