An Apple A Day Keeps The Doctor Away

My kind of an apple a day. If I eat them all no doctor is ever needed?! 😆

This recipe is what was missing in your life! New ballet dancers approved energy bites for brightening up the day.

All you need is a couple of ingredients in your pantry, a food processor and about 20 minutes of freedom in your busy schedule.

I used only few ingredients, as for me, simplicity is the key. I love to be able to create something with minimal effort, knowing that what I put into my body is pure and nutritious.
These energy balls are made of dried apples, dates, almonds, a little bit of tahini, coconut oil and cinnamon. That´s it, super simple to blend together and for some extra fanciness I rolled the balls in powdered coconut sugar and cinnamon mixture.
Feel free to omit the coconut oil, if you prefer to keep the fat lower. Though, the oil helps the balls firm up in the fridge they will stick together nevertheless.

Equipment

  • food processor

Ingredients

Apple Almond Bites

  • 1 cup dried apple rings 100g
  • 1 cup dried dates 150g
  • 1/2 cup almonds 75g
  • 1 tsp cinnamon
  • 2 tbsp tahini 35g
  • 1 tbsp coconut oil 12g, melted

Topping

  • 2 tbsp coconut sugar
  • 1/3 tsp cinnamon

Instructions

Apple Almond Bites

  • in the food processor blend almonds into small crumbles and set aside
  • blend apples and dates until the mixture turns smooth and sticky
  • add blended nuts, cinnamon and tahini and blend to combine
  • lastly add the melted coconut oil and pulse until mixed
  • take a spoonful of the mixture and form into bite size balls

Topping

  • place coconut sugar into the food processor and blend a little to get it more powdered sugar like
  • add cinnamon and stir
  • roll the balls in the sugar mixture

Notes

  • makes 25 bites
  • store in the fridge
  • can substitute tahini with any kind of nut butter
  • can leave out the coconut oil if preferred with less fat
