Weekend Calls For A Freshly Baked Banana Bread

Banana Bread is not only a great breakfast but it will also make your home smell heavenly for the full weekend 😉

I was experimenting a bit. Have had making the banana bread in the back of my head for ages. Now was the time to make it into reality. To try and see what comes out as I haven’t really tasted any, didn’t know what to expect as well and as everyone knows how heavenly a banana bread is I had to make sure I’m on the same page 🤣. Plus those dotted-overripe bananas were waiting for me in my kitchen – no excuses anymore! 

The outcome was very tasty, not that spongy cake structure, more dense and gooey as I wanted to make it as clean as possible.

This Banana Bread Will:

Banana Bread

Dry ingredients:

  • 1 cup oats blend into flour
  • 1/4 cup almonds and cacao nibs
  • 1/2 tsp each: cinnamon, baking powder, vanilla

Wet ingredients:

  • 75 g dates soaked 30 min in warm water
  • 1/4 cup almond milk
  • 1 tsp apple cider vinegar
  • 2 medium ripe bananas mashed (save few slices for topping)



  • blend oats into flour
  • pulse almonds and cacao nibs into small pieces
  • Mix first dry ingredients then add the wet ones
  • blend together into a smooth paste
  • Pour the batter into the mold
  • decorate
  • Bake 180°C 30 min and enjoy!
