Be More Cranberry White Chocolate Christmas Tart

Christmas In The Making✨

In my childhood, Christmas meant snow, snowman, ice skating, skiing, frozen windows, -nose, -toes and -fingers, bright cloudless sky and shiny white carpet on the ground.

Now, I guess, due to the global warming, the Christmas feeling mostly starts from the kitchen. And if there are no gingerbreads or winter themed cakes, I´m afraid, I would never get into the festive mood.

This year, as I am missing the snow a lot, I wanted to bring something special onto the table. And this is how this tart was born. Kept it in Christmas colors – white, red, green and gold.

This Cranberry White Chocolate tart is made using @bemoresuperfoods Be Fit protein bars and Be Healthy superfood powder. Both of their products give additional health benefits into my dessert. This tart is made low in sugar, free of gluten, eggs and dairy and full of immune-boosters and plant-based protein. I like when a cake turns out to Be More than just a bite of sugar that spikes the insulin level and makes the hormones dance.

This Tart is made of 3 layers:
  • Protein base – almonds, dates, coconut oil and BeFit bars
  • Cranberry middle – cranberries, BeHealthy, maple syrup, lemon juice, agar-agar
  • White Chocolate topping – cashews, coconut cream, maple syrup, white chocolate, lemon juice, agar-agar        

It might look a little bit of complicated at first but actually this tart is not hard to make at all. It just needs some time and patience to cool down the layers before applying them on top of each other. I added a photo instruction gallery for an easier follow. 
Here, I am using a Kitchenaid mini food processor, but any food processor works fine. It might be difficult to use a blender for the crust, but for the two other layers it definitely suits as well.

I used agar-agar in this recipe and it requires heating to make the fillings thicker. I like to bloom the agar in a little bit of lemon water like it is done with the gelatin. I find that this way it is easier to incorporate the agar-agar mixture evenly into the filling. Be More Cranberry and White Chocolate Christmas Tart

Equipment

  • food processor

Ingredients

Base

  • 100 g almonds
  • 50 g dates soaked 10 min in hot water
  • 20 g coconut oil melted
  • 5 BeFit raw protein bars @bemoresuperfoods

Berry layer

  • 160 g cranberries fresh or frozen
  • 125 ml water
  • 30 g maple syrup
  • 10 g Be Heatlhy powder @bemoresuperfoods
  • pinch salt
  • 1 tsp agar agar powder
  • 2 Tbsp lemon juice

White Chocolate layer

  • 150 g cashews soaked overnight or 30 min in hot water
  • 250 ml coconut cream 18% fat
  • 20 g maple syrup
  • 60 g white chocolate @ichoc_vegan_chocolate
  • 1 tsp vanilla extract
  • 1 tsp agar-agar
  • 2 Tbsp lemon juice

Decoration

  • cranberries
  • 1 BeFit raw protein bar @bemoresuperfoods
  • 20 g white chocolate @ichoc_vegan_chocolate
  • gold dust

Instructions

Base

  • first, pulse the almonds in your food processor until flourlike.
  • add broken protein bars and soaked and drained dates, pulse until combined and small crumbles.
  • lastly, add melted coconut oil and pulse until evenly mixed.
  • pour onto a mold and press down with a spatula.
  • place in the fridge while making the second layer.

Cranberry layer

  • place cranberries, water, maple syrup, Be Healthy powder and salt into the food processor and blend until smooth.
  • meanwhile, in a small bowl or glass put agar-agar together with lemon water and stir till combined, let it sit.
  • pour the cranberry mixture into a pot and bring to boil. Then reduce the heat to medium and stir in the agar-agar and lemon. Keep on stirring until the berry mixture starts to thicken.
  • When it looks already thicker take it from the heat and let it cool down before pouring it onto the base. (I like to pour the mixture few times into different bowls, so that it will cool down faster)
  • place into the fridge while making the chocolate layer

White Chocolate layer

  • in a food processor blend cashews, coconut milk, maple syrup and vanilla extract until smooth and silky.
  • meanwhile, place another batch of agar-agar and lemon water into a seperate bowl.
  • pour the cashew cream into a pot, put in the white chocolate chunks and bring slowly to boil, stirring continuously.
  • when the chocolate has been melted, add in the agar-agar mixture. Turn the heat to medium and stir until the mixture has thickened.
  • take it away from the heat and let it cool down slightly.
  • pour the mixture through a sieve to eliminate any lumps and air bubbles.
  • when the mixture is not so hot anymore pour it on the berry layer and place back to the fridge to harden.
  • Leave the tart into the fridge overnight or at least for few hours before decorating and cutting it open

Decoration

  • Cut some cranberries and thyme, crumble another BeFit bar and the leftover white chocolate, use some of your favourite sugar decorations or sprinkle the tart with powdered sugar or some gold dust. Ø

Notes

  • round tart mold 24 cm

  • stays in the fridge in an airtight container for up to a week
  • you can add more white chocolate into the recipe but then you might need to reduce the agar-agar, because cocoa butter in the chocolate helps the layer to set as well and the agar might make it too gummy then.
  • this recipe is quite mild. if you are a sweet tooth I would recommend adding a little bit of more maple syrup.
  • this recipe works with any kind of berries, choose your favourites.
