
When I started my vegan journey, sweet hummus was my favourite snack. There is already one Hummus Cookie recipe up on my blog, click here. But since @bemoresuperfoods came out with their super tasty collagen blends I wanted to include this beauty booster into my recipe too. I really recommend their products. In this recipe I use a Raspberry ´n´ Cherry collagen blend. As collagen is not vegan this recipe can´t be called vegan either. If you prefer to omit it, vegan cookies it is.

In this recipe I used mainly chickpeas, dates, almond meal and collagen.
If you want to have it oil free, you might need to add some extra liquid such as leftover date water or plant based milk.
Feel free to adjust the taste to your liking.
If you are a lazy baker with a demanding sweet-tooth yet try to stay lean and healthy you can definitely omit the baking part and enjoy this cookie dough as it is. This recipe is egg, dairy, gluten and refined sugar free, meaning, ready to eat on the go
