Blackberry Mousse & Almond Chia Pudding

Though I love warm breakfast, sometimes a ready to grab overnight bowl of health is all you need to get that day going.
It might look fancy but it definitely is not hard to make. It takes maximum of 20 minutes preparation in the kitchen the night before and then let the magic happen during your sleep

Blackberry Mousse & Almond Chia Pudding

Blackberry Mousse

  • 2 cups blackberries 300g
  • 1 cup coconut cream 250g
  • 1/4 cup agave 50g
  • 1 tsp agar-agar
  • 1/2 lime
  • 2 tbsp water

Chia pudding

  • 1/4 cup chia seeds 45g, @bemoresuperfoods
  • 1 1/3 cup almond milk 300g
  • 2 tbsp almond flour
  • 2 tbsp agave
  • 1/4 tsp vanilla extract


Blackberry mousse

  • mash the berries in a bowl with a fork until nicely smooth
  • add the coconut cream and agave nectar and mix well
  • squeeze the lime into a pot, add water and agar-agar powder to the lime juice and bring to boil, then turn off the heat and stir until the powder has dissolved
  • stir the agar liquid with the coconut berry mix and pour into molds
  • place the molds into the fridge to set overnight

Chia pudding

  • mix all the ingredients in a bowl and let it sit overnight
  • next day place into molds as preferred and serve chilled


  • makes 4 big or plenty of small ones
  • if you want to have the blackberry mousse in diagonal then place the molds under an angle when pouring the mousse in, chill in the same position

The same recipe can be used for making these tiny cuties. Sometimes a little bite or two is all you need.
