Christmas Popped Around

December went by so fast this year. It is already Christmas and soon it is time to greet the new year.

I, of course, was planning to make massive Christmas baking but my schedule did not really agree with that.
And that is how these little Christmas Cake Pops were born.

Though, it might look like a lot of work the hardest part is not to eat all the cake pops in one sitting. Making them is easy and fun and definitely deserve a spot on the Christmas table.

Cashew Cake Pops

Cake pops

  • 1/2 cup cashews 75g, soaked overnight
  • 1/2 cup dates 75g, soaked overnight
  • 1/2 cup water 130ml
  • 1/2 cup coconut flour 50g
  • 0,5 tsp cinnamon
  • 0,25 tsp vanilla extract

Chocolate cover

  • 100 g dark chocolate
  • 1 tsp coconut oil


  • 20 cake pop sticks I used long wooden sticks
  • caster sugar
  • water
  • food colours
  • sugar decorations


  • the night before put cashews into one bowl, cover them with water and let them soak overnight. Do the same with dates but measuring 1/2 cup water for them.

Cake pops

  • rinse cashews and place them into a food processor
  • pour dates with the soaking water into the food processor
  • blend until combined but not until a puree, crumbly consistency is fine
  • add rest of the ingredients and blend until nicely combined
  • form into bite-size balls and place into the fridge to set

Chocolate cover

  • melt chocolate and coconut oil using a water bath method
  • dip the tip of the cake pop sticks into the melted chocolate and insert into the cake balls. freeze for about 10 minutes
  • now dip cake balls carefully into the chocolate until covered. Let the excess chocolate drip off. Swirl and tap gently if needed and place them in a jar into the fridge to set.


  • mix caster sugar with water and food colours until preferred consistency and pipe nice patterns on the cake balls
  • for final touch add sugar sprinkles and decorations


  • makes 20 bite size balls
  • If you don´t have cake pop sticks you can simply make truffle balls instead
  • store in the fridge or freezer
