CCC - Cookie, Caramel & Chocolate

When you are not sure whether you want a cookie or a cake – I got you covered!
I have wanted to create a Twix bar for long. Honestly, I already tried once. That one turned out delicious but was hardly sticking together.  The cookie base was too coconutty and crumbly that you had to have a spoon close by.
This one on the other hand – No Complaints!

Hard Not to Fall in Love!

Nicely Smooth, Sweet and Silky – all you need to satisfy your sweettooth😉

This recipe is one of my new favourites as it is very simple, fast and delicious. 
I added BeMoreSuperfoods BeFit superfood mix into the base for a little extra protein, sweetened the bars with dates and maple syrup and topped with dark chocolate. These FitTwix Bars are made of 3 layers:
  • Cookie layer – coconut and almond flour, BeFit, maple syrup and coconut oil
  • Caramel layer – dates, cashews, vanilla and coconut oil
  • Chocolate layer – melted chocolate

  • 2/3 cup coconut flour 70g, @bemoresuperfoods
  • 1/2 cup almond flour 50g
  • 3 tbsp BeFit protein powder 15g. @bemoresuperfoods
  • 1/4 cup coconut oil 50g, melted
  • 3 tbsp maple syrup 30g
  • 0,5 tsp cinnamon
  • 0,5 tsp vanilla


  • 1/3 cup dates 70g, about 8 dates, soaked 30 min in hot water
  • 1/4 cup cashews 40g, soaked 30 min in hot water
  • 1/4 cup coconut oil 50g, melted
  • 2 tbsp liquid date soaking water/plant milk
  • 0,5 tsp vanilla
  • salt


  • 75 g dark chocolate
  • 1 tsp coconut oil



  • preheat the oven to 160C° (if keeping raw skip the baking)
  • in a bowl mix the dry ingredients
  • stir in the wet ingredients and mix well
  • press into a mold
  • bake 8-10 minutes to give the cookie layer a baked taste
  • cool down while making the caramel layer


  • place presoaked dates and nuts with vanilla, salt and 2 tbsp liquid into a food processor and blend well
  • add melted coconut oil and pulse until well combined and creamy
  • pour over the base


  • melt chocolate and coconut oil using the water bath method
  • pour over the caramel layer
  • place into freezer for 2 hours or overnight


  • used the 25cm banana bread mold
  • makes 10 bars
  • store in the fridge or freezer
  • raw without baking is totally fine as the coconut oil freezes and keeps the cookie layer together. But I recommend the baking as it gives the base a nice taste
