
Presenting you my absolute favourite bread that is totally gluten, egg and sugar free. It is made of mainly nuts and seeds, additional oat flakes and rye flour and bind together thanks to psyllium husk powder.Â
Most of the time, if you are talking about making a proper bread, it will take you a few days to prepare. Sourdough bread is definitely tasty and in the end not hard to make but it requires some patience and practice to get it right. And you definitely have to have time to follow the process.Â
This bread recipe, on the other hand, is easy and foolproof and doesn´t require too much time nor effort.
I am not a huge bread fan, but homemade bread has always been something I crave for time to time. The smell is just heavenly and the warm bread with some melting butter on top is something so special.
I have been experimenting with a sourdough rye bread but after a couple of not so successful tries my patience led me down. It is a bit trickier than the normal white bread but if you master it you are a real bread baker! I am yet to discover the magic of it one day, but at the moment I fell in love with this gorgeous loaf made of nuts and seeds. It only requires some blending, mixing, soaking and baking and ready it is.

What I also love about this bread is that depending on how much you pulse or blend the nuts and seeds you can either make a fine bread or a grainy bread. As I said this recipe includes mainly nuts and seeds but there is an important ingredient in it that helps the bread stay together – psyllium husk powder. Psyllium, perhaps, is not so widely known. It is a dietary fiber that helps with digestion and as it absorbs water I oftentimes use it in vegan recipes. Together with flax seeds they act as an egg replacement here in this recipe.
Another important part here is to let the bread stay at room temperature for 2 hours. During this time the nuts and seeds will soften and the psyllium will help to bind the dough together. Later, all you need to do is to let the oven bake it.
