
Loved how many of you wished to have the recipe of my new Banana Bread that I showed in my Instagram Story the other day. Staying at home during this crazy Corona Time can get a little challenging. Though, the food deliveries are still happening it is safer and definitely more fun to bake and experiment in your own kitchen. And also, this way you´ll save a little money using what´s available at home. I have already made it twice 😊 ate it all by myself – breakfast all day long haha!
This Banana Bread uses few simple ingredients that are always in my kitchen – apples, bananas, oats, coconut sugar, almond meal, @bulkpowders protein and cinnamon, my absolute love. Adding then a splash of any plant milk or even just pure water, a little bit of soda and vinegar to make it rise and simple toppings that are also optional. I used a handful of walnuts and added some maple syrup in the end for some extra sweetness.
Also, don´t worry if you have no coconut sugar in hand, any sweetener you like will suit. Honey is very nice as well if you are a non vegan. I just believe in the lower GI (Glycemic Index) of the coconut sugar and sometimes I love to use the honey cause of many benefits the Ayurvedic and Chinese medicine bring out.
And if having no almond meal but a packet of almonds waiting somewhere in the corner of you kitchen cupboard then just take 50g and pulse it in the food processor long enough to get a flour-like consistency.
When it comes to the protein powder I love using Bulkpowders Pea Protein and Brown Rice Protein powders in equal parts to make the protein complete. When combined, pea and brown rice provide an optimal amino acid profile which is superior to any single plant protein source. But feel free to use any protein powder you have or like in this recipe.
