Protein Apple Banana Bread

Long Name Worth Remembering


Loved how many of you wished to have the recipe of my new Banana Bread that I showed in my Instagram Story the other day. Staying at home during this crazy Corona Time can get a little challenging. Though, the food deliveries are still happening it is safer and definitely more fun to bake and experiment in your own kitchen. And also, this way you´ll save a little money using what´s available at home. I have already made it twice 😊 ate it all by myself – breakfast all day long haha!

This Banana Bread uses few simple ingredients that are always in my kitchen – apples, bananas, oats, coconut sugar, almond meal, @bulkpowders protein and cinnamon, my absolute love. Adding then a splash of any plant milk or even just pure water, a little bit of soda and vinegar to make it rise and simple toppings that are also optional. I used a handful of walnuts and added some maple syrup in the end for some extra sweetness.

Baked It Fast, Ate It Faster, So I Made It Again!

Also, don´t worry if you have no coconut sugar in hand, any sweetener you like will suit. Honey is very nice as well if you are a non vegan. I just believe in the lower GI (Glycemic Index) of the coconut sugar and sometimes I love to use the honey cause of many benefits the Ayurvedic and Chinese medicine bring out.

And if having no almond meal but a packet of almonds waiting somewhere in the corner of you kitchen cupboard then just take 50g and pulse it in the food processor long enough to get a flour-like consistency.

When it comes to the protein powder I love using Bulkpowders Pea Protein and Brown Rice Protein powders in equal parts to make the protein complete. When combined, pea and brown rice provide an optimal amino acid profile which is superior to any single plant protein source. But feel free to use any protein powder you have or like in this recipe.   • food processor


  • 1 1/2 cup oats 160g
  • 1/2 cup almond meal 60g
  • 1/3 cup coconut sugar 45g
  • 2/3 cup unsweetened protein powder brown rice and pea protein @bulk 2x20g
  • cinnamon
  • 3 bananas ripe, ~350g
  • 2 apples medium, ~200g cored
  • 1/2 cup plant milk 120ml
  • 1 tsp baking soda
  • 1 tbsp apple syder vinegar
  • handful walnuts
  • 2 tbsp maple syrup


  • preheat oven to 180°C
  • place oats into food processor and blend into flour, set aside
  • core the apples, cut into pieces and place into the food processor, blend into smaller pieces, not into puree
  • mash bananas in a bowl
  • add coconut sugar, plant milk, cinnamon, protein powder, almond meal and blended apples, mix well
  • place the baking soda in the middle of the bowl, pour the vinegar on top and when it starts to sizzle stir the mixture well
  • add the oat flour and stir until everything is well combined
  • pour the batter into a bread mold (either greased or lined with parchment paper) and slightly press some walnuts on top for decoration
  • bake about 40 min in 180°C
  • brush some maple syrup on top of the baked banana bread and let it cool down in the mold


  • mold 24x7cm
  • you can grate the apples as well, I am just lazy and the food processor method is faster
  • you can use oat flour instead of flakes, just be mindful of the cups, go for 150g
  • can also use buckwheat flour instead, go for 150g
  • you can use your favourite protein powder but mine are not sweetened so adjust the recipe accordingly
  • you can substitute coconut sugar with honey if non vegan
  • if you don´t have any plant milk use simply water
