Raw Superfood Choco Bars

Ingredients

Base:

  • 1 cup almonds 150g
  • 1/3 cup coconut flour 30g
  • 1/3 cup cacao powder 30g
  • 3 tbsp BeFit Superfood Blend @bemoresuperfoods
  • 1 tsp baobab powder @bemoresuperfoods
  • 1/2 tsp 5 tsp ashwagandha powder @naturefinest
  • 1 cup dates 150g, soaked 30 min in hot water

Filling:

  • 1/4 cup coconut butter 50g, melted
  • 2 tbsp date syrup @rapunzel_naturkost
  • 1/4 cup water warm
  • 1/6 cup cacao powder 15g
  • 2 tbsp coconut oil melted

Instructions

  • pulse the almonds into preferred crumbs
  • in a big bowl mix almonds, coconut flour, cacao powder and superfoods
  • soak the dates, drain, place into food processor, add 1 tbsp liquid and process into a paste
  • with your hands mix the date paste into dry ingredients, press into a mold and set aside while making the filling
  • using the water bath method melt coconut butter and oil, add the liquid sweetener, warm water and cacao powder, mix well and pour over the base
  • place the cake into the freezer for 1 h
  • decorate with some melted coconut butter and superfood powders

Notes

  • mold 15x15cm, makes 9 bars
  • you can use your favourite superfoods or if not a fan of them the recipe works without them as well
  • if you are too lazy to make the topping with the water bath method use boiled water instead of warm one in the recipe to melt the solid ingredients, keep in mind it won't be considered raw anymore
