Found myself in my kitchen with a pumpkin. Can anyone tell me what’s up with pumpkins and Thanksgiving? I think Pumpkins should be in season all year round. But if you prefer to wait for the next Thanksgiving then good luck with resisting this deliciousness 🙃
Honestly, why I came up with this recipe is because I wanted to experiment with making a vegan baked cheesecake. The raw cheesecakes are delicious but I find it a bit tricky to keep them looking nice at room temperature. And to transport them from one place to another can be a real challenge.
Therefore, I came up with a Baked Pumpkin Cheesecake that is both creamy and cheesecaky!
