Pumpkin Season All Year Round

Found myself in my kitchen with a pumpkin. Can anyone tell me what’s up with pumpkins and Thanksgiving? I think Pumpkins should be in season all year round. But if you prefer to wait for the next Thanksgiving then good luck with resisting this deliciousness 🙃

Honestly, why I came up with this recipe is because I wanted to experiment with making a vegan baked cheesecake. The raw cheesecakes are delicious but I find it a bit tricky to keep them looking nice at room temperature. And to transport them from one place to another can be a real challenge. 🙃
Therefore, I came up with a Baked Pumpkin Cheesecake that is both creamy and cheesecaky!

Cheesecake That Is:

  • Sugar free, sweetened with dates
  • Easy to make
  • Deliciously creamy

Baked Pumpkin Cheesecake

  • 1 cup almonds
  • 1/3 cup walnuts
  • 3 tbsp cacao powder
  • 60 g dates soaked in hot water 30 min
  • 1/4 cup coconut oil melted


  • 300 g cashews soaked overnight
  • 400 ml coconut milk full fat
  • 250 g dates soaked in hot water 30min
  • 2 cups pumpkin puree
  • 1 chia egg 1 tbsp chia seeds mixed with 4 tbsp water
  • 1 tsp grounded cinnamon
  • 1/4 tsp grounded ginger
  • vanilla
  • 1-3 tbsp cacao powder



  • in food processor ground first the nuts, then add the dates and cacao powder, pulse until sticky crumble
  • add the oil, mix well
  • press the crust firmly into the mold
  • place in the freezer while making the filling


  • using blender mix everything besides the cacao into a smooth paste
  • take 1/3 cup aside and mix with cacao powder
  • pour the pumpkin filling onto the crust, add the cacao filling by batches on top
  • mix with a toothpick to create a nice pattern.
  • bake at 180C° 30 min
  • chill overnight in the fridge


  • if you forget to put the cashews for soaking the night before you can quick soak them in boiled water about 30 min to an hour
