Sweetness In The Savoury

I found my new favourite – easy, healthy, delicious and filling Indian influenced savoury meal!!!
I’m going to be converted to savoury sooon 😅 It has been a joke for years that one day I’ll find the savoury more satisfying to make and experiment with than the sweet. I didn’t agree until now, let’s see what the future brings – @my_life_my_savouries 🤣 unlikely still but never say never!

I’m sure I give an impression I live only on cakes and chocolate. Well, not that far from the truth but most of the time I am too hungry to prepare something proper and fancy, not to mention have willingness to measure and take photos before collapsing from hunger.
And also I find it less interesting from the decorative side. Desserts on the other hand have endless possibilities.

But here it comes! To my savoury food fans!

Created this dinner with a touch of sweetness thanks to the sweet potato. Inspired by the Indian dishes and made easier for everyday life.

Sweet Potato Dahl That Is:

Sweet Potato Dahl

Ingredients

  • 1 onion
  • 4 garlic cloves
  • 1 tbsp curry
  • 1 tsp garam masala
  • 1/2 tsp grounded ginger
  • 1/2 tsp grounded turmeric
  • pepper and chili
  • 2 1/2 cups veggie broth
  • 1 big sweet potato ~500g
  • 1 cup yellow lentils 180g
  • kale

Instructions

  • chop onion and garlic, saute with water few minutes until tender
  • meanwhile rinse the lentils and chop the potato into cubes (peel if preferred)
  • add spices to the onion garlic mix, stir well
  • add lentils potato and veggie broth onto the pan, stir and put the lid on, bring to boil
  • when boiling reduce the heat to medium, place the lid so it is slightly open and cook 20 min.
  • after 20 min chop the kale, put on the dahl, cover with the lid and turn the heat off. Let it sit 5-10 min, until kale has softened
  • serve with Basmati rice.

Notes

  • if you prefer more sauce like dahl add extra 0,5-1 cup of veggie broth
  • if you like ìt more creamy you can use coconut or soy milk/cream instead of the extra broth
