Vegan Chocolate Pancakes with Raspberry Jam

Basically an oatmeal in a different form 😉

Ever since I got a Blendtec blender at home, making pancakes has become therapy.

Not just Sundays, but every morning is meant for Chocolate.
Being a chocoholic I, of course, couldn’t just have the @friendlyvikingseesti chocolate oat milk in my glass. Instead, it’s both in my glass and on my plate 🙈

It is my absolute favourite vegan chocolate milk out there. If you have a chance to try this I truly recommend. All Friendly Viking´s products are plant-based and without artificial sweeteners nor preservatives.

I am sure this recipe will become one of your favourites too. Why? Because it is healthy, simple, easy to remember and tasty. The recipe is below alongside a video tutorial.

Adding this recipe video to show you how simple the process is.

In this recipe I used oats and banana, making it sound like a regular morning porridge. Added the chocolate milk for the taste and to get the smooth pancake batter consistency and some extra baking powder to make the cakes more fluffy.

To top it off I simply made a raspberry jam using frozen berries and chia seeds. It is not added here on this video, but all you need to do is to warm up the berries, mix in chia seeds, stir and let it sit to thicken. You can find the instructions in the recipe below.
 If you prefer a sweeten version add your favourites like maple syrup, coconut sugar etc.

  • blender



  • 180 g oats⁠
  • 1 banana⁠
  • 1,5 tsp baking powder
  • pinch salt⁠
  • 350 ml chocolate oat milk @friendlyvikingseesti⁠


  • 1/4 cup raspberries frozen
  • 1 Tbsp chia seeds



  • Blend everything into a smooth batter
  • Grease a nonstick skillet with coconut oil
  • Cook the cakes for 2 min on each side


  • warm frozen raspberries in a saucepan
  • add chia seeds, stir and set aside to thinken


  • Makes 20 small cakes⁠
  • You can use your favourite milk and adjust the sweetness by adding maple syrup or other preferred sweeteners
  • I prefer my jam natural, but feel free to sweeten it as well
