Zucchini Chocolate Banana Bread

The Hidden Greens ✨

A cake is a cake, even if half of a zucchini is hidden into it.
Lately, I have been a real banana bread baker. I love to wait until the bananas turn dotty and brown so the sweetness comes out better. My kitchen is constantly smelling sweet thanks to the ripening bananas on the table and my fridge is full of banana-bread-ready bananas.

I like to make one banana bread during the weekend and have a slice ready for those rushed mornings or late night sweet cravings. Most of the time I don´t weigh the ingredients and using what I have in hand I see what comes out. 

This time I felt I should make a banana bread that is a little bit more balanced with macros. I do not calculate anything myself and honestly don´t know what the ratios should be. But when eating a cake every day I better make it more filling and satisfying. 💖

I decided to use some extra protein kick in my cake as well as adding some greens and superfoods. And on top of that wanted to make it into a chocolate cake as well. Should I name it a GreenChocolateSuperCake instead? 😆

Zucchini Chocolate Bread is made of rye flakes, cacao powder, bananas and zucchini, little bit of coconut sugar, @bemoresuperfoods BeFit blend and Baobab powder and some extra Pea protein and Brown Rice protein from @bulkpowders. Healthy, delicious and filling for either dessert or why not for a kick-starter breakfast. You know me, I could eat cake all day every day 😊

Ingredients

  • 2 cups rye flakes 150g
  • 1/3 cup almond flour 35g
  • 2/3 cup protein powder 60g, brown rice and pea protein @bulkpowders
  • 1/3 cup coconut sugar 45g
  • 3 bananas ~340g
  • 1/2 zucchini 200g
  • 1/2 cup plant milk/water 120ml, used rice milk
  • 1/4 cup cacao powder 20g
  • 2 tbsp BeFit powder 15g, @bemoresuperfoods
  • 1 tbsp Baobab powder 7g, @bemoresuperfoods
  • 1,25 tsp baking soda
  • 2 tbsp apple cider vinegar
  • cinnamon

Instructions

  • preheat oven to 180°C
  • place rye flakes into a food processor and pulse until flour-like, doesn´t have to be super fine
  • in one bowl mix rye flour, almond flour, protein powder, BeFit and Baobab powder and set aside
  • in another bowl mash the bananas with a fork
  • cut the zucchini into circles, place in a food processor and pulse until smaller pieces, kind of grated
  • add grated zucchini, coconut sugar, milk and cinnamon to the bananas and stir until well combined
  • place the baking soda in the middle of the banana bowl, pour the vinegar on top and straight when it starts to sizzle stir the mixture well
  • add the flour mixture from the first bowl and stir until everything is well combined
  • pour the batter into a bread mold (either greased or lined with parchment paper) and slightly press some hazelnuts on top for decoration
  • bake about 40 min in 180°C
  • let the banana bread cool down in the mold
  • decorate with chocolate spread and extra nuts

Notes

  • mold 24x7cm
  • you can grate the zucchini as well, I am just lazy and the food processor method is faster
  • you can use rye flour instead of flakes, just be mindful of the cups, go for 150g
  • if not a rye fan use oat flakes or oat flour or buckwheat flour instead, go for 150g
  • you can use your favourite protein powder
